Hi! Today I wanted to share with you an easy chocolate chip pound cake recipe. I always receive a ton of compliments whenever I make it. One of my college roommates gave me this recipe, and it is definitely a go-to.
Let’s get started! One of the great things about this recipe is you’ll already have most of the ingredients you need.
What you’ll need:
~Package yellow cake mix
~3.9 oz package instant chocolate pudding mix
~1/2 cup white sugar
~3/4 cup water
~3/4 cup vegetable oil
~4 eggs, beaten
~1 cup sour cream
~1/2 cup milk chocolate chips
Glaze (optional)
~2 tbsp. cocoa
~1 tbsp. + 2 tsp. water
~1 tbsp. oil
~1 tbsp. corn syrup
~1 cup sifted powdered sugar
Instructions (sorry I didn’t take any pictures during, but it really is pretty easy):
1) Preheat oven to 325 degrees
2) Grease and flour a 10 inch bundt pan (I usually use a 9×13 pan because I feel like I get more servings out of it, but I made it in a bundt pan this time so it would be pretty for y’all)
3) In a medium to large bowl, stir together the cake mix, instant pudding, and sugar
4) Add the water, oil, eggs, and sour cream to the dry mix, and mix until well blended (I blend until lumps are gone)
5) Fold in the chocolate chips
6) Pour into the prepared bundt pan
7) Bake for 50-60 minutes in the preheated oven (for my oven, I usually have to cook it 5-10 minutes longer than an hour–so don’t be too concerned if it is not cooked after an hour)
8) Cake is done when a toothpick inserted comes out clean
9) Cool in pan for about 10 minutes before inverting onto a wire rack to cool
10) Dust with confectioner’s sugar before cutting and serving—-or, you can make the glaze, which is what I chose to do this time : )
Glaze:
1) Combine glaze ingredients in a small saucepan
2) Cook and stir until smooth
3) Add the 1 cup of sifted powdered sugar and stir in
4) Drizzle on top of the pound cake (you do not have to use all of the glaze if you do not want to)
And serve! The sour cream makes this cake super moist! (sorry I know some really do not like that word, but it really is! I don’t know a better way to describe it) I usually do not even dust confectioner’s sugar or make the glaze because it is really good without it (and who wants the extra dishes to make the glaze haha!).
