I LOVE these breakfast burritos. I eat one every Monday with some salsa : ) I am a creature of habit. They are perfect to make a bunch and store them in the freezer.
Yum! Lets get started! Here is what you’ll need:
Freezer Breakfast Burritos Ingredients:
~Shredded Cheese (I bought a 4 cup bag and used a little more than 2 cups)
~Soft Taco Flour Tortillas (I used 2 10-count packs)
~Refrigerated Hash Browns (I like the Southwest Style for a little extra something something)
~Sausage (Mild or Spicy, whichever you prefer) (I used almost 2 lbs.)
~Eggs (I used 10 and had a little bit left over)
~Milk
**You’ll also need freezer storage bags**
Freezer Breakfast Burrito Directions:
~Cook the hash browns and sausage according to the directions on the package
~Scrabble your eggs with however much milk you like

~Next let everything cool so you can handle it
~Then I like to layer the sausage, eggs, hash browns, and finally cheese on the tortilla. Resist the temptation to put too much filling…I always make this mistake on the first one I make, and it makes it difficult to roll up

~After the layering, you will want to roll up your burrito. First take one side of the tortilla and roll it over the filling. Then fold over the sides, and finally fold over your the first roll you made.

~Finally, roll each burrito in a paper towel and place it in a freezer bag. I use freezer quart size bags and can fit 3 in there
~Set out a burrito in the fridge to defrost the night before you want to eat it. Heat it up in the microwave for about an minute and a half.
**I made 20 burritos in this batch. I probably could have made one or two more but I ran out of tortillas. Sad day. However much of each ingredient that you put into the burrito will determine how much of the ingredients you need. You could probably make this a little healthier by using low fat cheese, turkey sausage, wheat tortillas and egg whites/eggbeaters.
